Makes 3 Waffles

Ingredients:

1 cup plant based milk - preferably hemp
1 tbsp apple cider vinegar
1 cup (145g) plain flour
1/2 tbsp baking powder
1 tbsp maple syrup
1/4 tsp salt
1 tbsp hemp seeds

Optional, to serve:
1/2 tbsp maple syrup
Fresh berries
Fresh mango
Dairy-free ice-cream
Shredded coconut

Method:

  1. In a mixing bowl, combine milk and apple cider vinegar and leave for 2 minutes. Sieve in plain flour, salt and baking powder, mixing well.

  2. Add maple syrup, mix until smooth

  3. Heat a waffle iron and grease lightly with butter or oil.

  4. Spoon the waffle batter into the waffle iron, using a 1/2 measuring cup of batter per waffle. Cook for 4 minutes, or until golden. Remove from the waffle iron and repeat until batter has been used.

  5. Serve warm with fresh mango, fresh berries, dairy-free ice-cream and shredded coconut if desired. Pour maple syrup over and enjoy!
